Delicious served with salad or side dish of your choice.


  • Chicken Breast (allowance)
  • Juice of half a lemon (allowance)
  • Pinch of ground Ginger
  • Pinch of ground Cumin
  • Zest of half a Lemon
  • Pinch of Saffron
  • Salt and Pepper to taste
  • Chopped fresh Coriander to garnish


Marinate saffron strands in lemon juice then crush into a paste.
Add dry spices.
Dip chicken breast in lemon juice and spice mixture.
Rub additional spices into chicken breast with salt and pepper.
Wrap servings in foil.
Bake chicken at 180°C for 20-30 minutes or until chicken is cooked completely and tender.

Place on a serving dish and sprinkle with coriander.
