Simple and delicious Zucchini Rolls – quick and easy – no cooking required!


Zucchini (allowance)
Ricotta (allowance)
1 tsp freshly chopped Mint
2 tsp Balsamic Vinegar
1 tsp Olive Oil (allowance)
Salt and Pepper to taste

Preparation Method:

Use a vegetable peeler to slice Zucchini into thin strips. Lay down on a board. Mix together Ricotta, mint, salt and pepper.

Put a teaspoonful of the mixture on to the end of the slice of Zucchini and then roll tightly. Mix together the Olive Oil and Vinegar and drizzle on to a plate. Place rolls on top of dressing.

Serve with crackers and salad of your choice from balance of your allowance.
Variation:  Sprinkle with Paprika and try a variety of different herbs
