Especially good with baby spinach! Walnuts boast excellent amounts of omega-3 essential fatty acids, as well as copper and healthy (mono-unsaturated) fat.

Ingredients:
Boiled egg quartered (allowance)
Baby Spinach leaves (allowance)
Walnuts (allowance)
1 tsp low fat Mayonnaise (allowance)
1 tsp soy sauce (allowance)
1 tsp water
¼ tsp mustard powder
Salt and pepper to taste

Preparation Method:

Place all ingredients in a bowl together and toss till well combined.
Enjoy with snack bread (allowance)
