Quick and Easy, this recipe is great for lunch any day.
Black Mushroom with Ricotta
Whole black Mushroom (allowance)
1 tsp Olive Oil (allowance)
1 tsp Balsamic Vinegar
1 tsp dried Origano
Chopped Spring Onion (allowance)
Salad Greens (allowance)
Firm cubed Ricotta cheese (allowance)
Place mushroom on a non stick baking tray.
Sprinkle over spring onion, olive oil, balsamic vinegar and dried oregano.
Crumble Ricotta on top.
Bake in a moderate oven until mushroom begins to soften and ricotta has browned.
If ricotta does not brown sufficiently use a chefs blow torch to brown.
Serve with salad greens.
