Delicious served with salad or side dish of your choice.
- Chicken Breast (allowance)
- Juice of half a lemon (allowance)
- Pinch of ground Ginger
- Pinch of ground Cumin
- Zest of half a Lemon
- Pinch of Saffron
- Salt and Pepper to taste
- Chopped fresh Coriander to garnish
Marinate saffron strands in lemon juice then crush into a paste.
Add dry spices.
Dip chicken breast in lemon juice and spice mixture.
Rub additional spices into chicken breast with salt and pepper.
Wrap servings in foil.
Bake chicken at 180°C for 20-30 minutes or until chicken is cooked completely and tender.
Place on a serving dish and sprinkle with coriander.
