Try this fish dish, it is light and delicious for lunch.

Ingredients:
Halibut Fillet (allowance)
½ teaspoon Garlic Powder
¼ teaspoon Mustard Powder
Crispy chopped Cucumber (allowance)
Bunch of fresh Herbs – origanum, basic, coriander
Zest of ½ a Lemon
¼ teaspoon Black Pepper
½ teaspoon drained Capers
Tomato chopped (allowance)
Lemon wedge (allowance)

Method:

Place the fish in a shallow oven proof dish.
Top with lemon zest, garlic powder, black pepper, mustard powder and capers.
Bake in a moderate oven for 10 to 12 minutes or until fish is cooked.
Chop the cucumber and tomato into cubes to make a salsa.
Add the fresh herbs. Season, plate and top with the baked fish.
Garnish with a lemon wedge.
Enjoy with snackbread allowance.

Tip: The first step to using garlic is to separate the individual cloves. Place the bulb on a cutting board or hard surface and gently, but firmly, apply pressure with the palm of your hand at an angle. This will cause the layers of skin that hold the bulb together to separate.
