Let’s spice things up with this delicious salad!
Ingredients:
Shelled Shrimps (allowance)
¼ tsp Coriander powder
¼ tsp Cumin powder
¼ tsp Curry powder
Tinned Chickpeas (allowance)
Onion (allowance)
Tomato (allowance)
Red Pepper (allowance)
1 Tbsp Balsamic Vinegar
1 tsp Olive Oil (allowance)
1 tsp chopped Rosemary
Salt and Pepper to taste
Method:
Flash fry shrimps in a non stick pan with the coriander, curry and cumin for a few minutes till cooked – Use spray and cook and a little water.
In a bowl mix together:
Chickpeas
Chopped onion
Chopped tomato
Cubed Red pepper
Vinegar, olive oil and rosemary
Season with salt and pepper.
Top with shrimps.
Serve hot or cold. Enjoy!
